This vegetarian food experience is rooted in the love for Puglia and the vocation of its gastronomic tradition.

The vegetable cuisine gives shape to a menu that reinterprets the raw materials of the territory with a modern twist, selected according to quality and seasonality, coming from local productions or vegetables grown in the gardens owned by Le Carrube (as well as an olive grove and 250 fruit trees).

Taking advantage of the region’s bountiful offerings, the menu hasdishes that incorporate local grains and fresh fruits and vegetables.
